Ingredients:
- Ripe Beef Tomatoes – 2
- Fresh Mozzarella – 150 gms
- Avocados – 2
- Fresh Basil Leaves – few, torn into pieces
- Black Olives – 20
- Fresh Crusty Bread – to serve
For the Dressing:
- Olive Oil – 4 tblsp
- White Wine Vinegar – 1 1/2 tblsp
- Coarse-grain Mustard – 1 tsp
- Salt and Pepper as required
Method:
- Using a sharp knife, cut the tomatoes into thick wedges and place in a large serving dish.
- Drain the mozzarella and roughly tear into pieces.
- Cut the avocados in half and remove the stones.
- Cut the flesh into slices, then arrange the mozzarella cheese and avocado with the tomatoes.
- To make the dressing, mix the oil, vinegar and mustard together in a small bowl, add salt and pepper to taste, then drizzle over the salad.
- Scatter the basil and olives over the top and serve immediately with fresh crusty bread.
